Here I am, admiring my first foodie picture.  I really like doing this!  This pineapple chicken recipe is one of Jamie Oliver's, who I used to love watching on TV.  His recipes stick in my mind so easily, and I can actually retrieve them when I am standing in the isle of the grocery store thinking what will I make tonight?  You also can't go wrong, the worst thing that can happen is that maybe you will add either too much or too little coconut milk, curry powder, chicken  or pineapple which isn't so bad is it?

Jamie Oliver's Coconut Pineapple chicken

Ingredients:

500 g ( 17 oz.) chicken breast
one small package coconut milk
one medium-sized pineapple
1 tbl. (15ml) of sunflower or peanut oil
curry powder
salt
pepper

1.  Cut chicken into bite-size pieces, as illustrated below.



2.  Take your pineapple and peel it as illustrated below:

3.  After this step is completed, remove the "eyes" of the pineapple with a sharp knife.  You will then end up with the pineapple looking something like this:
4. At this point, you can cut around the core, as seen clearly in this picture:

5. After each section is removed from around the core, you can slice it into long pieces and then into smaller ones.


6.  Brown chicken in oil.
7.  Add pineapple and  together until all the juices are released.
8.  Add 1 tbl. of curry or to taste.
9. Add package of coconut milk and let it simmer to blend flavors together, 15 to20 minutes.
